Celery and sweet corn soup

Ingredients

Number of serving: 2
Celery 3 cups,chopped

Sweet corn 3 (2 uncooked for grinding ,1cooked for garnish)

Butter 1/2 teaspoon

vegetable stock 1/4 cup (optional)

Water 3 cups or as needed

Salt to taste

Preparation

  • Grind smoothly two uncooked fresh corns using 3cups of water and keep it aside.
  • Chop celery and keep aside. Pressure cook one corn and keep it aside.
  • Now, in a medium heat vessel add butter and slightly saute celery till a nice aroma of butter and celery comes.
  • Then add Vegetable stock if using. Next add ground uncooked corn. Add needed salt to it.
  • Uncover and cook it till fully done. Add little water if necessary.
  • Transfer this soup to a serving bowl and add cooked corn kennels in it and slightly mix.
  • Serve hot and enjoy this healthy and comforting soup.
  • Options: You can also make spinach and corn soup in the same method by adding spinach instead of celery.
