- Grind smoothly two uncooked fresh corns using 3cups of water and keep it aside.
- Chop celery and keep aside. Pressure cook one corn and keep it aside.
- Now, in a medium heat vessel add butter and slightly saute celery till a nice aroma of butter and celery comes.
- Then add Vegetable stock if using. Next add ground uncooked corn. Add needed salt to it.
- Uncover and cook it till fully done. Add little water if necessary.
- Transfer this soup to a serving bowl and add cooked corn kennels in it and slightly mix.
- Serve hot and enjoy this healthy and comforting soup.
- Options: You can also make spinach and corn soup in the same method by adding spinach instead of celery.
