Replace your classic breadcrumbs with... crushed peanuts! The opportunity to give extra flavors to your baked chicken (yum!). To eat with your fingers of course and to accompany with a barbecue, mustard or ketchup type sauce for a 100% pleasure tasting ;-) Oh, and you will only need 3 ingredients to make this recipe! This time, you have to try it !

  • Roughly chop your peanuts in a blender to turn them into small pieces. Transfer everything to a plate.
  • Beat an egg in a bowl and cut your two chicken breasts in half lengthwise.
  • Prepare a baking tray lined with parchment paper and preheat your oven to 390°F (200°C).
  • Take half a chicken breast, dip it in the beaten egg and then in the peanuts before placing it on the baking sheet.
    Do the same with the other 3 pieces of chicken.
  • Bake for 20 minutes at 390°F (200°C).
    And there you are ! Enjoy your food !

We place our chicken pieces on a plate and serve with pan-fried vegetables and pasta: the perfect trio!

You can keep this recipe for 2 days in the refrigerator in an airtight container.

Can I freeze this breaded chicken?
You can freeze this recipe, while checking that your chicken breasts have not already been frozen. For defrosting, we advise you to put them in an oven at 280°F (140°C) for 5 - 10 minutes while checking the cooking.

Which peanuts to use for breaded peanut chicken?
Here we used roasted, unsalted peanuts. You can also replace the roasted peanuts with unroasted peanuts (but still without salt!).

What sauce to serve with this breaded chicken?
We love to prepare this recipe for a meal tray to eat with your fingers and accompanied by a barbecue sauce. Don't hesitate to try a tartar sauce made with capers or even a honey/mustard sauce. Lots of sauce recipes can be found on our website.
