- Wash and soak the rice for at least 15 minutes. Soak the rice at night and keep in fridge to prepare in the morning.
- Boil 5 cups of water and add 1 teaspoon salt. When it boils add the drained rice and cook until the basmati is fully cooked.
- Drain and keep it ready. While the rice is cooking, cut the vegetables into small cubes. You can use the mixed vegetables availbe in packets.
- Heat oil in a non-stick pan. Add the chopped celery and grated garlic.
- Saute until the garlic turns golden brown. Add the chopped onion and carrot. Add salt and saute for 3 minutes.
- When the carrots are a bit cooked add in the capsicum. Saute for another 1 minute. Mix in shredded chicken pieecs.
- Add pepper at this point.Mix in the rice, and finally the spring onions. Switch off the fire and serve.
