  • Marinate the chicken pieces with salt, pepper and soya sauce and keep aside for 10 minutes.
  • Heat your wok and add the oil. Then add the garlic and ginger and sauté for about a minute. The aroma of just garlic and ginger cooking is awesome and appetising enough.
  • Add star anise to this and the base of the spring onion. Sauté for a minute more.
  • Add the marinated chicken. When it is cooked half way add the bell peppers as well.
  • After the chicken appears fully cooked add the basil leaves. Now add the oyster sauce. Cook for about a minute more and add ¼ cup water and sugar.
  • Let the gravy boil and check for salt. Add salt if required only. You can also make chicken in a similar way with black bean sauce and add your favourite veggies to it.
