Marinate the chicken pieces with salt, pepper and soya sauce and keep aside for 10 minutes.
Heat your wok and add the oil. Then add the garlic and ginger and sauté for about a minute. The aroma of just garlic and ginger cooking is awesome and appetising enough.
Add star anise to this and the base of the spring onion. Sauté for a minute more.
Add the marinated chicken. When it is cooked half way add the bell peppers as well.
After the chicken appears fully cooked add the basil leaves. Now add the oyster sauce. Cook for about a minute more and add ¼ cup water and sugar.
Let the gravy boil and check for salt. Add salt if required only. You can also make chicken in a similar way with black bean sauce and add your favourite veggies to it.
