Melt butter in a large pan and cook the onions.
Put the onions in the center of a puff pastry roll. Add the raw salmon. Add salt and pepper.
Cut the mozzarella into slices and put the slices on top of the salmon. Put the cooked spinach on top. Add salt.
Fold the sides of the puff pastry and then the bottom and top.
Unroll the second puff pastry and cut it to form a rectangle. Cut some little lines vertically.
Put this second puff pastry on top of the stuffed one. Fold the borders under the stuffed puff pastry.
Baste a beatten egg on top and then bake for 30 minutes at 350°F (180°C).
There you are, your crusted salmon is ready !
