This crusted salmon with spinach and mozzarella is perfect for a family dinner !

- Melt butter in a large pan and cook the onions.
- Put the onions in the center of a puff pastry roll. Add the raw salmon. Add salt and pepper.
- Cut the mozzarella into slices and put the slices on top of the salmon. Put the cooked spinach on top. Add salt.
- Fold the sides of the puff pastry and then the bottom and top.
- Unroll the second puff pastry and cut it to form a rectangle. Cut some little lines vertically.
- Put this second puff pastry on top of the stuffed one. Fold the borders under the stuffed puff pastry.
- Baste a beatten egg on top and then bake for 30 minutes at 350°F (180°C).
- There you are, your crusted salmon is ready !
