Ingredients

1)Indian Rice Noodles / Idiyappam:

• 1 cup of Rice Flour
• or Soak the rice in water for about 2 hrs. Drain the water and dry them indoors.Grind it to make a fine powder.
• Salt to taste

For Sweet Idiayappam:

• 2 teaspoons. of grated coconut
• 1 teaspoon. of Ghee
• Sugar as needed
• Roasted cashews ( optional)

2)For Kara Idiyappam (2 methods):

First method:

• 1 teaspoon. of oil
• 1 teaspoon. of mustard and urad dhal
• 2 red chillies
• A bunch of curry leaves

Second Method:

• 1 teaspoon. of oil
• 1 teaspoon. of mustard and urad dhal
• 2 red chilllies
• 1 1/2 teaspoon. lemon extract
• 1/2 teaspoon. of turmeric powder
• A bunch of curry leaves

Preparation

• 1)Indian Rice Noodles / Idiyappam:
  Mix 1 cup of rice flour with the required amount of boiled water and salt. Knead them into a smooth dough. Put a small portion of the dough in the Idiayappam mould and press them in Idli Moulds. Steam them till they are cooked well.
  For Sweet Idiayappam:
  Mix all the ingredients with the steamed Idiyappam.
• 2)For Kara Idiyappam (2 methods):
  First method:
  Heat oil in a pan. Add the mustard and urad dhal. When they stop spluttering, add the curry leaves and red chillies. Finally add the steamed Idiyappam and mix them well.
  Second Method:
  Heat oil in a pan. Add the mustard and urad dhal. When they stop spluttering, add the curry leaves and red chillies. Add the lemon extract along with a pinch of turmeric powder . Finally add the steamed Idiyappam and mix them well.
