Ingredients

1)Indian Rice Noodles / Idiyappam:
- 1 cup of Rice Flour
- or Soak the rice in water for about 2 hrs. Drain the water and dry them indoors.Grind it to make a fine powder.
- Salt to taste
For Sweet Idiayappam:
- 2 teaspoons. of grated coconut
- 1 teaspoon. of Ghee
- Sugar as needed
- Roasted cashews ( optional)


2)For Kara Idiyappam (2 methods):
First method:
- 1 teaspoon. of oil
- 1 teaspoon. of mustard and urad dhal
- 2 red chillies
- A bunch of curry leaves
Second Method:
- 1 teaspoon. of oil
- 1 teaspoon. of mustard and urad dhal
- 2 red chilllies
- 1 1/2 teaspoon. lemon extract
- 1/2 teaspoon. of turmeric powder
- A bunch of curry leaves

Preparation

Step 1

1)Indian Rice Noodles / Idiyappam:
Mix 1 cup of rice flour with the required amount of boiled water and salt. Knead them into a smooth dough. Put a small portion of the dough in the Idiayappam mould and press them in Idli Moulds. Steam them till they are cooked well.
For Sweet Idiayappam:
Mix all the ingredients with the steamed Idiyappam.

Step 2

2)For Kara Idiyappam (2 methods):
First method:
Heat oil in a pan. Add the mustard and urad dhal. When they stop spluttering, add the curry leaves and red chillies. Finally add the steamed Idiyappam and mix them well.
Second Method:
Heat oil in a pan. Add the mustard and urad dhal. When they stop spluttering, add the curry leaves and red chillies. Add the lemon extract along with a pinch of turmeric powder . Finally add the steamed Idiyappam and mix them well.
