- Heat 1 tbsp oil in a pan. Stir fry diced chicken breast until it is cooked and get some brown marks. Turn off the gas; remove cooked chicken in a bowl. Clean the pan with paper towel or use another pan. We are not adding any water in this dish so the pan should be clean before sauteing onion and pepper.
Add the remaining oil to pan and heat it on medium. Saute sliced onion for a minute then add ginger, garlic and chopped peppers. Stir fry for two more minutes or until they are tender enough for your liking.
Add chicken pieces, mango, soy sauce, fish sauce, rice vinegar, salt and red pepper flakes. Cook it for another one minute and remove from heat. Serve immediately over a bed of fried rice or in a wrap.
