- This Okra (Ladies Finger / Bhindi) with Coriander and Tomatoes recipe is a taste of Greece or Greek cuisine.
Wash the okra, trim off any stalks from the okra and leave whole and keep aside.
Heat oil in a pan and fry the onions and coriander for 3-4 minutes till translucent. Add the okra and garlic and fry for 2-3 minutes. Mix in the tomatoes with sugar and cover with a lid and simmer for 10-12 minutes, stirring once or twice.
Stir in lemon rind, lemon juice, sugar, salt and pepper to taste.
