Stormy sunday-- italian style minestrone, orzo salad & bruschetta

Ingredients

Number of serving: 4

1) Orzo salad :

Orzo salad

1 cup Orzo(cooked)

1/4 Cup Onion

1 cup cherry tomatoes quartered

2 tablespoons basil

2 tablespoons kalamata/ 2tb green olives sliced

2 tablespoons capers

2 tablespoons Dijon

ΒΌ teaspoon sugar

3 tablespoons balsamic

3 tablespoons oil

3.5 oz feta

Salt and Pepper

Lemon juice


2) Mushroom and Feta Bruschetta :

2 small cans mushrooms (diced)

4 tomatoes (seeded and diced)

1 bunch of basil (chopped)

1 tablespoon capers

2-3 garlic cloves minced

Vinegar and Oil to taste

Salt and Pepper

1/4 Cup Feta


3) Minestrone :

1/2 c onion (diced)

1 cup celery(diced)

1 cup carrot(diced)

1 cup bell pepper(diced)

1-3 cloves garlic minced

1 -15 oz can diced tomatoes

1-15 oz red kidney beans

1 qrt beef broth

1/2 Cup Pasta optional

1 tablespoon Italian Seasoning

Preparation

  • 1) Orzo salad :
    Toss and chill.
  • 2) Mushroom and Feta Bruschetta :
    Toss all ingredients except feta. Once everything is mixed gently mix in feta.
  • Serve on toasted Italian bread .
  • 3) Minestrone :
    Basically throw it all in the pot, bring to boil reduce to simmer for 45 minutes.
