Tri-Colour Capsicums and Chicken Stir Fry ? for Chinese New Year

  • In a wok or a large frying pan, brown the chicken and set aside.
  • In the same wok/pan, stir fry the capsicums, carrot, onion, ginger, green beans and garlic. Stir for 2-3 minutes.
  • Add the soy sauce, hoisin sauce, ketchup and oyster sauce and stir through for 2 minutes and then mix in the chicken.
  • Add the flour and sugar and then mix through. At this point, if too thick, thin and adjust with water.
  • Stir through all the ingredients for another 2-3 minutes. Garnish with coriander and serve on a bed of steamed rice.
