Ingredients

Number of serving: 4
2 paratha's shredded to thin strips

2 onion chopped

2 tablespoons garlic ginger paste

2 green chili chopped

2 tablespoons soy sauce

1 tablespoon curry powder

1 tablespoon chili powder

Few curry leaves

2 tablespoons tomato puree

1 carrot thinly diced

1 potato diced

100 g tofu cut into small cubes / alternatively use soya meet

3 spring onion chopped

Preparation

  • Either make or buy 2 paratha's or roti canai, cut them into quarters, pass it through electric slicer till they are finely shredded. Set them aside.
  • In a pan sauté onions, garlic ginger paste, curry leaves, green chili?s for few minutes till onion is soft.
  • Add soy sauce, tomatoes puree, curry powder, chili powder and salt. Mix shredded parata with this spice mixture and set aside.
  • In a pan pour some oil sauté chopped potatoes. After 5-10 minutes add tofu and soy sauce; sauté for 5 more minutes. When potatoes are soft add carrots and stir fry for 2 minutes.
  • Add stir fried vegetables to kottu roti, mix well with vegetables add salt to taste, and garnish with spring onion. Serve immediately.
