Ingredients

• 170 g plain flour
• 150 g unsalted butter
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 4 eggs - yolks and whites separated
• 80 g sugar - divided into 2 portions
• 3 medium bananas, mashed
• 2 teaspoons lemon juice to prevent your cake from turning black the next day.
• 60ml milk
• 1/2 teaspoon cream of tartar
• 80 g walnuts, slightly chopped and toasted

Preparation

• Preheat oven to 170 degrees C. With an electric mixer, cream butter and 40g sugar together until pale and fluffy.
• Then whisk egg yolk and remaining 40g sugar in a separate bowl until pale and thick. Slowly add this into the butter mixture, mixing well after each addition.
• Mix mashed banana with lemon juice and milk. Stir into the mixture.
• Mix flour well with baking powder and soda. Fold in the sifted flour in 3 batches. Stir in walnuts.
• Beat egg whites slightly, add cream of tartar, and beat again until stiff. Fold into batter.
• Pour batter into greased tin and bake for 45-50 minutes.
