- Preheat oven to 170 degrees C. With an electric mixer, cream butter and 40g sugar together until pale and fluffy.
- Then whisk egg yolk and remaining 40g sugar in a separate bowl until pale and thick. Slowly add this into the butter mixture, mixing well after each addition.
- Mix mashed banana with lemon juice and milk. Stir into the mixture.
- Mix flour well with baking powder and soda. Fold in the sifted flour in 3 batches. Stir in walnuts.
- Beat egg whites slightly, add cream of tartar, and beat again until stiff. Fold into batter.
- Pour batter into greased tin and bake for 45-50 minutes.
