Green peas cookies

Ingredients

• 130 g green peas ( snack type - grinded )
• 90 g icing sugar
• 1/4 teaspoon salt
• 170 g self raising flour
• 100 g vegetable oil

Glazing:

• 1 egg yolk
• 1/2 tablespoon milk

Preparation

• Mix all the dry ingredients in a mixing bowl till well mixed. Add oil and slowly mix until a dough is formed.
• Roll dough into small balls. Place the balls 1 inch apart on parchment lined baking sheet. Using the back of a ball pen cover ( make sure you wash the cover before using ) make a small indent on the balls.
• Glaze the top with egg yolk mixture.
• Bake in preheated oven at 170º C for about 15 minutes or until the surface is browned.
• Cool completely on a rack before storing.
