- 1. Fry onions in a skillet until it starts browning. Turn heat off and add in balsamic vinegar. Mix and set aside. (I stole this idea from an episode of Giada de Laurentiis', Giada at Home.)
2. Microwave whole beetroot in a little bit of water for about 5 mins. Microwave for longer if you like it a little more tender. Cool, then peel and cut into wedges.
3. Make dressing by whisking together all the dressing ingredients.
4. Assemble salad - i.e. greens, beetroot wedges, orange segments, and onions - in a bowl. Just before serving, drizzle on dressing and top with toasted almonds.
