Today’s post is dedicated to another pasta salad idea: pasta salad with artichokes and surimi crab sticks.

Pasta salad with artichokes and surimi crab sticks

It’s easy-to-do, tasty. It has regular nutrition facts and that is unusual. In fact pasta salad has always a lot of ingredients and is rich in fat and calories.

Besides in this case we use organic pasta made with kamut flour as you can see in the photo. Why kamut pasta?

Kamut is a form of wheat originated in Egypt. Kamut flour has a lot of properties: it is easy-to-digest, it has a higher protein and potassium content. Compared to regular wheat, Kamut is lower in carbohydrates and higher in protein, amino acids and lipids. You can use it for muffins, bread and baked goods.

Important: its glycemic index is 45.

We use organic whole kamut flour and pasta very often. We like it and it’s an healthy product.
