*Asian Baked Chicken Tenders and Tweet Tweet sauce
This is a dish I thought up a month or so ago. The original idea was based on "bang bang" shrimp I believe its from a bonefish grill? I've never actually been to one but I believe theres one about an hour or so away... Recently I found myself just struck by Food Network Magazine, this "bang bang" sauce recipe was actually in a recent issue. I purchased the very first issue and was somewhat unimpressed, it just did not catch me. Most of the recipes just did not strike me as "me food" (I used to say cat food but then people looked at me weird as if to say "well yeah why would you want to eat CAT food????). I think with time the magazine has improved, its worked out its kinks and has a good variety of dishes now. The issue I grabbed actually had a lot of things I'm dying to try, however this sauce recipe was not what I'd call a knock out of the park recipe. I think I will try working on it some more and re-post an update at a later date when I've officially wowed it up! I already have a few idea's for improvement. The sauce was not horrible it's just not the flavorful symphony I was anticipating, I've been calling it "tweet tweet" sauce, because instead of going BANG and asserting you with its aggressive flavor, it says "tweet" like a harmless little birdie. Well it made sense to me anyway... For now here is my version of a crusty chicken tender that pairs well with any Asian style spicy sweet sauce, or even ketchup if you so choose. I served mine with basmati rice and steamed broccoli and red peppers with a light soy and vinegar dressing. Enjoy! Cat Crispy Chicken Tenders:2 pounds chicken strips (one large chicken breast will make about 3 tenders) 1/4 cup flour (more if necessary) 2 eggs 2 tablespoons milk 1 tablespoon melted butter 1 cup panko bread crumbs 2-3 tablespoons sesame seeds Prepare a baking sheet by lining it with parchment or a silicone baking mat. Preheat oven to 350-375 degrees. I used my convection option on my oven at 325. Lay out three plates or dishes to use as a breading assembly line. I use paper plates for dry and a pie plate for the egg wash. Place flour on one dish, the panko and sesame seeds on another dish and beat eggs, melted butter and milk together in the third dish. To prepare the chicken dredge the chicken tender in flour, pat off any excess and submerge into the egg wash, be sure to coat it all over. Allow excess to drip off and then place in the breading mixture. Coat evenly patting any bald spots with extra breading. Once its evenly coated place on your baking sheet. Repeat this process until you're finished. You may need extra flour, egg or breading mixture but I always figure its best to make less instead of wasting any thats been touched by chicken. Bake 20-25 minutes depending on your oven the time may vary flip the tenders over once half way through baking. Chicken tenders bake up fairly quickly if they are small, if you want a shorter baking time you can make "chicken nuggets" by cutting one chicken tender into three pieces, but this will lengthen your breading time.
