for the crust:
2 cups flour
5 tablespoons sugar
1/4 teaspoon salt
170 gr butter
1 egg
1 egg yolk

for the filling:
110 gr butter, at room temperature
1/2 cup sugar
1 sachet vanilla sugar
2 eggs
1/2 cup all-purpose flour
60 gr finely ground almonds
8 plums, or other fruit (apples, pears, peaches...), cut in thin slices


first, prepare the crust. mix the flour, sugar and salt and add the butter until the butter is starting to get well incorporated. add the egg and egg yolk and mix until a dough is formed. chill the dough while you make the filling.

to make the frangipane filling, beat the butter, sugar and vanilla together with an electric mixer until light. beat in the eggs, followed by the flour and almonds. beat until light.

cut the dougn in 1 cm thick slices and press them on the bottom and sides of a 28 cm tart pan (i used a 24 cm tart pan and the crust was a little thick). spread the filling. arrange the plum slices.

bake at 180°C for 40 minutes or so, until the filling in the middle of the tart is fully cooked.
