Aloo Parwal Ki Subzi & Batter Fried Banana Chips
Aloo Parwal Ki Subzi Serves: 4 Preparation time: 15 minutes Ingredients 200 g parwal, sliced 200 g potatoes, peeled and sliced 25 g peanuts, roasted and coarsely pounded 1/2 teaspoon turmeric powder 1 teaspoon chilli powder 1 1/2 teaspoon coriander powder 1 teaspoon dry mango powder / amchur powder 1 teaspoon garam masala powder 2 tablespoon gram flour ( besan ) 25 g coriander leaves, chopped 2 tablespoon cooking oil Salt to taste 25 ml water Method Heat oil in a pan. Add potatoes, parwal, salt and other spices, except gram flour, peanuts and chopped coriander leaves. Saute all ingredients. Add 25 ml water, cover with a lid and cook on a low heat until done. Stir occasionally. Add gram flour and peanut powder. Mix well. Simmer for 5 minutes. Garnish with chopped coriander leaves. Serve hot with rice/ chapati. Batter Fried Banana Chips Serves: 4 Preparation time: 15 minutes Ingredients 4 raw bananas 75 g flour 200 ml cooking oil A pinch salt Method Peel bananas. Thinly slice ( about 1/8 - inch thick ). Mix with flour and coat lightly. Heat oil in a pan / kadai. Add banana slices in small batches without crowding. Fry for about 3 minutes until golden brown. Drain chips on paper towel.
