Apricot Delight ( A rich apricot dessert with ice cream ) Serves: 4 Time required: 30 minutes Ingredients 400 g apricots 2 tablespoon ( 30 g ) powdered sugar, if required 200 ml cream, lightly beaten 100 g vanilla ice cream 100 g pistachios 100 g almonds Method Boil the almonds and pistachios separately, then peel and slice them. Set aside. Wash the apricots and boil till tender. Drain, remove the seeds and the apricots. Stir in the powdered sugar if required. Stir in the lightly beaten cream, and the sliced almonds and pistachios. Mix in the vanilla ice cream and chill till the time of serving.
