Baked Eggs - Italian Style
This recipe can be made without the meat, or with a different kind of meat. Feel free to mix up any of the ingredients. I did this recipe "Italian" style because I always have salami, bruschetta, fresh mozzarella, and parmesan in my fridge. Any kind of cheese, meat, and veg will work. Baked Eggs - Italian Style (serves 2) -4 eggs -4 pieces of your favorite salami, diced -2 small round potatoes, diced -2 tablespoons diced onion -4 tablespoons brushetta (I love the Trader Joe's brand, it.is.so.good.) -4 thin slices of fresh mozzarella -2 tablespoons of fresh grated parmesan cheese -2 teaspoons dried oregano -1 teaspoon garlic powder -salt, pepper, and olive oil -non stick pan spray 1. Pre heat the oven to 400 degrees F. 2. In a small, non stick skillet, heat 1/2 tablespoon of olive oil. Add the diced potatoes and brown them for about 5 minutes. Once potatoes are browned, add about 1/4 cup of water, reduce heat, cover and steam potatoes for about 7 minutes (all water will evaporate, so watch these potatoes to make sure they don't burn). Add the onion, cook for another 2 minutes and remove from heat. Toss with oregano, garlic powder and a little salt and pepper. 3. Spray 2 ramekins with non stick pan spray and add the potatoes/onion. On top of the potatoes, add the salami and bruschetta (2 tablespoons per dish). Finally, crack to eggs into each dish. 4. Bake in a 400 degree F oven for about 12 minutes until the whites become white and the yolk begins to set. 5. Remove ramekins from oven and place 2 slices of mozzarella on top of eggs and a tablespoon of parmesan. Cook for another 5 minutes until cheese is melted. Remove and eat, but allow to cool a few minutes before digging in...it will be steaming hot! related searches : Baked
