Baked Halibut with Lemon and Capers
I was so pleased with last night's dinner. Fresh, vibrant, summery, healthy! I went to bed feeling rejuvenated, alive! Annnd slightly hungry... which is why I woke up early to make Coconut Cookies. OH, BE QUIET. I can afford to after last night's dinner. (More on those later.) No but really, this was a lovely meal and VERY simple to make. The simplest of all things simple. You'll see... Baked Halibut with Lemon and Capers (Serves 2) 2 8oz. halibut filets 1 T fresh lemon juice 2 T olive oil 2 tsp capers Salt and pepper Preheat oven to 400. In a small bowl, whisk together lemon juice, olive oil and capers. Clean and dry fish, and place on a rimmed baking sheet. Season with salt and pepper, and pour dressing over both filets. Bake for 12 minutes, or until fish is opaque. Squeeze some leftover lemon on top and ENJOY! I served this with an Orzo salad consisting of cherry tomatoes, chopped fresh mozzerella, cucumbers, avocado, hearts of palm, garbanzo beans and pine nuts. Whisked together some lemon juice, red wine vinegar and olive oil for the dressing. Salt and pepper. Serve it slightly warm. PERFECT. related searches : Baked
