Baked mussels
now, ain't that juicy enough!?! tired of gnawing crinkly dry baked mussels!?! taste the natural goodness of juicy mussels with an extra pump of fresh parmesan cheese. serves 5 ingredients: 1000g fresh New Zealand mussels, in half shells 1/2 cup freshly grated parmesan cheese 140g butter 6 tbsp olive oil 10 cloves garlic juice of one lemon salt pepper wash and drain the mussels. set aside. put a saucepan in low heat. melt the butter in olive oil. fry the garlic till it turns light golden brown. season with salt and pepper. remove from fire. squeeze the juice of one lemon to the garlic-butter mixture. pre-heat oven at 180 degrees C. arrange the mussels on a baking tray. top each mussel with garlic-butter mixture. drizzle freshly grated parmesan cheese on each mussel. bake for 20 minutes. serve right away with tabasco sauce. food&photo.helenegarcia.january2009.
