Blueberry Oat Bars

I went over to my g-ma’s for a little baking session this afternoon. I had a recipe that I was dieing to try and my grandma is having a garden party tomorrow and needed me to make some peanut butter pies for it. So after, I made the pies I made these little bites of yum!


Blueberry Oat Bars

Ingredients



1 cup walnuts coarsely chopped
1 1/2 cups all purpose flour
1 1/4 cups old fashioned oats
1/3 cup granulated sugar
1/3 cup packed brown sugar
1 tsp salt
1/2 tsp baking soda
1 1/2 sticks butter (melted)
1 cup blueberry preserves
1 packet blueberries.

Directions



Preheat the oven to 350 degrees. Butter an 8inch square baking pan and line the bottom with parchment paper. Spread the chopped walnuts in a pie plate and toast for about 5 minutes.
In a large bowl, whisk the flour with the rolled oats, granulated sugar, brown sugar, salt, baking soda and walnuts. Using a wooden spoon, stir in the melted butter until the oat mixture is thoroughly combined.
Press 2/3rds of the oat mixture in an even layer on the bottom of the baking pan and top with the blueberry preserves. Sprinkle blueberries over preserves (as much as desired). Sprinkle the preserves with the remaining 1/3rd of oat mixture.
Bake the bars for about 45 minutes until the top is golden brown. Transfer to a wire rack (turn the whole baked mixture out) and cool completely before cutting (about 2-3hrs).



Snack

While the bars were baking, I broke down and had one of these Macadamia Macaroon cookies!


These cookies taste yummy and they are HUGE! Only 90 calories a cookie ;-) ! I also had 1 1/2 of my bars when they were done :oops: . They are a big hit- about half of ‘em have disappeared already!


Dinner

I took some of my bars over to Max, and he paid me back for my yummies with some Chipotle Veggie Bowl! Yum Yum and Full Full!


I’m off to read some Zunagzi for my buddhism paper and finish my workout that was o rudely interrupted this morning.
