Breakfast-y, Brunch-y, Munch-y Pancakes
Hands up if you love pancakes? Yup, I thought there would be a few of you! I love lazy and luxurious breakfasts (especially if someone else is cooking). Here is my recipe for Eggless Cheesy Sweetcorn Pancakes. Of course you can adapt the basic recipe to make sweet pancakes (only if you promise to drizzle them with lots and lots of syrup!) My pancakes never turn out perfectly round so I just used a heart shaped cookie cutter to make them look neater and prettier. Although I?m sure you guys can make rounder pancakes than me, so you probably won?t need to resort to my harsh extremes! Ingredients 1 ½ cups plain flour 2 tsp baking powder ½ cup sweetcorn (I used tinned) 3 tbsp plain natural yogurt (or sour cream) ½ cup mild cheddar cheese, grated ½ onion Salt to taste Black pepper to taste 1 cup cold sparkling water/soda water Butter or oil to fry Method 1. Combine all of the ingredients in a large bowl, leaving the sparkling water until the end. When you are ready to fry your pancakes add the water and quickly stir trying to keep as many bubbles as you can in the mixture. 2. Heat the oil or butter (I used a mixture of both) in a frying pan and place two tbsp?s of the batter in the middle. Fry on a medium-low heat and flip. Remove when golden on both sides. 3.
