Carrot Cake Jam and Cream Cheese Eggs
Mmmmm… so many yummy flavors this morning! For Christmas, my dad gave me a wonderful jar of homemade carrot cake jam. I wasn’t sure what to expect from such an interesting flavor of jam, but it tasted just like carrot cake! The ingredients included pineapple, pear, carrots, sugar, lemon, and spices. It is delicious! I spread the carrot cake jam on a slice of toasted Arnold’s Double Omega bread. I also made an Eggbeater patty in the microwave with ground pepper and 1 tbsp of whipped cream cheese cooked on top, which was egg-cellent! Creamy, cheesy, and eggy in every bite! Delish! All together with iced coffee… About 20 minutes after finishing breakfast, I still wanted something else to eat. I made myself a quarter of a whole wheat pita with Barney Butter and carrot cake jam inside. It sort of hit the spot, but I still kind of want something else to eat… maybe I’ll try a piece of fiber-ific fruit. On today’s agenda: taking down our Christmas tree, putting away our Xmas decorations, getting started on cleaning our closets, and my second-to-last shift at Healthworks.
