Eggs, tofu, soup
Happy almost Friday! It's been a good day in the City of Lake. Yes, just lake since I've only been able to find one "lake" in this town. I ran a quick 3.3 miles this morning and made eggs in a basket for breakfast:
I took two slices of Ezekiel bread and used a cup to trace a hole in the middle of each piece. Then I took an egg and beat it in a small bowl, placed the bread on the skillet and poured the eggs in the middle: I let them heat up for a few minutes, then carefully flipped them. They were splendid. Reminded me of french toast without the sugar or syrup. I also had a satsuma. My grandparents have orange and satsuma trees in their backyard and they sent me home with a whole basket at Thanksgiving: Even though it hasn't frozen yet, these are really sweet!! Nothing like homegrown produce I tell ya! Before I left for work this morning, I massaged some kale with lemon juice and sprayed it with some EVOO in preparation for lunch. I also rubbed 1/5 of a block of extra firm tofu with some ginger and let it marinate in 1 tsp sesame oil, 2 tsps rice vinegar. When I made it home for lunch, I sautéed the tofu and some mushrooms in 1/2 tsp sesame oil and tossed it on the kale with a sliced radish: I really like tofu. I liken it to an artist with a blank canvas, with the tofu being the blank canvas. Okay, maybe I'm getting a little strange on you. What I mean is, tofu has no taste, so whatever you season/marinate it in, is what it will taste like. Yum. I also dug into the nut butter jar after this lunch. I found another nut butter I love. I guess I should call it a seed butter. That would be sunflower seed butter, otherwise known as Sunbutter. YUM! FABULOUSO! Almond butter still reigns supreme in my heart, but Sunbutter is amazing. And for only $6/jar, it's definitely a little more wallet friendly than the $10/jar almond butter I bought a few weeks back. Work was good today. If you read my twitter, you saw that I made a fool out of myself while trying to talk medical speak with one of my doctors. I was updating a form we use in clinic and removed a test that I didn't think we did. The test was called a "Prostrate Screening, Digital." My doctor saw that I had crossed through that term in order to remove it and told me that she did, in-fact, do that test in clinic. I told her no, we don't as we don't have a digital machine to do the prostrate screening. She informed me that digital meant finger and prostrate screening meant rectal exam. Yes, as in sticking a finger (or, digit in the medical world) in to the anus (or prostrate). I felt ridiculous for not realizing that... Oh well, it made for a good, albeit awkward, laugh. For dinner, I just had more soup. Boring for the blog? Yes. Delicious in my stomach? Heck yes!! I made Thad an enchilada with organic ground beef, a La Tortilla whole grain rye wrap, fat free sour cream, enchilada sauce and lots of cheese: Ugly picture, but he said it tasted good ;) I forsee a cup of tea in my future! Back to watching the Polar Express and doing some online Christmas shopping. I doubt I'll blog tomorrow. We have Thad's work Christmas party in Melrose tomorrow night, and I have to wake up at the crack of dawn--no before dawn--on Saturday to take my official medical coding exam. Say a little prayer for me if you will! It's 5.5 hours long and I have to report to the building to take the exam at 7:30am in Gainesville on a Saturday--the SEC championship Saturday no less!
