ENSALADAS Y MAS ENSALADAS (salads)

This is a continuation of my birthday get together(s). 

While Joan of FOODalogue was visiting, we cooked and she posted our experience in my tiny kitchen in Manhattan. We decided to make it a healthy dinner party.  Go to her post and you will see all we came up with.

One of the salads which I want to share with you is the baby new potatoes and also a new salad made this week thinking of how many times Joan tells me I do not eat enough veggies and fruits... give me a break, salad or a big juicy pork chop?  Just kidding...yeah, right. 

We went to Dean and Deluca in Soho and I saw these new potatoes that were so tiny and immediately, we thought, potato salad with haricots verts.



I boiled the potatoes until just tender then added the beans and removed from heat.  In the meantime in a frying pan I heated about 4 tablespoons of olive oil added 4 sliced garlic cloves and sauteed until lightly golden.  Drain your potatoes and beans add to garlic oil mixture.  Heat through, add salt and pepper and serve.  This works well at room temperature also.

I also have a young, fellow blogger, which I have mentioned her before in the past.  Hell notes for Beauty.  She loves salads and I love her tips.  I just did her scalp massage and I feel stimulated.  Check her out - lots of goodies.
For this salad, I used:  baby rockets (arugula), strawberries, mangoes, blue cheese, figs and a reduction of balsamic vinegar added a few table spoons olive oil, salt and pepper to taste.   So refreshing.
