Bitter melon (gourd) salad

This healthy salad makes a great appetizer and perfect partner of any fried fish.

Ingredients

Number of serving: 5
1 medium bitter melon

3 tbsps rock salt

1 large red onion, sliced thinly

3 medium tomatoes, diced


Dressing:

1/3 cup vinegar

iodized salt

ground pepper

Preparation

  • Cut bitter melon lengthwise. Remove seeds. Cut into diagonal thin slices. Mix with rock salt and squeeze off juice. Wash and drain. Refrigerate for 15 minutes.
  • Put together bitter melon, onion and tomato slices.
  • Prepare dressing:
    Mix vinegar, salt, ground pepper and sugar. Pour over bitter melon, onion and tomato mixture.
  • Serve cold with your favorite fried fish.
