Cut bitter melon lengthwise. Remove seeds. Cut into diagonal thin slices. Mix with rock salt and squeeze off juice. Wash and drain. Refrigerate for 15 minutes.
Put together bitter melon, onion and tomato slices.
Prepare dressing: Mix vinegar, salt, ground pepper and sugar. Pour over bitter melon, onion and tomato mixture.
