- Cut bitter melon lengthwise. Remove seeds. Cut into diagonal thin slices. Mix with rock salt and squeeze off juice. Wash and drain. Refrigerate for 15 minutes.
- Put together bitter melon, onion and tomato slices.
- Prepare dressing:
Mix vinegar, salt, ground pepper and sugar. Pour over bitter melon, onion and tomato mixture. - Serve cold with your favorite fried fish.
