Tofu and guisantamole

Ingredients

• 4 c. thawed frozen green peas
• 1 large red onion, cut into chunks
• 1 large bunch cilantro
• juice of 2 limes
• 1 jalapeño, cut into pieces
• salt, pepper, and cumin to taste

Preparation

• Combine all ingredients in the bowl of a food processor (or large bowl if using a hand blender) and pulse to combine, and then blend until smooth.
