Couscous salad for a simple, healthy and colorful starter!

You never have enough easy and healthy recipes in your cookbook, right? Especially when we are looking to do something that will make us several meals. So for that we suggest you use your semolina in a couscous salad! With seasonal vegetables and red beans for the "vegetable protein" part, here you are with a complete recipe. Don't forget the fresh parsley to flavor and decorate!

  • A salad bowl
  • A cutting board
  • 1 knife

Preparation

  • In your salad bowl, place the semolina with the water and 1 tablespoon of olive oil. Mix, cover and let stand for 10 minutes.
    At the end of this time, your semolina has swelled. Mix it with a fork then place your salad bowl in the fridge for 20 minutes to cool it.
  • Meanwhile, prepare your filling. Cut the carrot into cubes after peeling it. Do the same with the tomato. Wash the pink radishes and cut them into rings. Slice your onions and chop your parsley. Drain your cooked red beans.
  • Once the semolina has cooled, add the red beans, carrots, tomatoes, radishes, onions and parsley to your salad bowl.
  • Season with 6 tablespoons of olive oil and 3 tablespoons of cider vinegar. Salt, pepper, mix well to combine and adjust the seasoning if necessary. There you are, your couscous salad is ready !

What can I substitute for parsley?
You can replace it with cilantro.

Repeat this recipe endlessly and throughout the year using seasonal vegetables! Cucumber, zucchini or even melon in spring / summer and squash roasted in the oven or steamed in autumn / winter!

How do I flavor my seasoning?
Do not hesitate to add the juice of a lemon to your seasoning, or even lime for a slightly tangy effect. And for crunch, almonds, pistachios and hazelnuts will be perfect!

When to eat this couscous salad?
This is the kind of recipe that we love to transfer into a jar or our "lunch box" and take with us to work for the lunch break! When the good weather arrives, this recipe is also perfect to take on a picnic.

Can I add animal protein to this salad?
Yes No problem ! Here, the recipe is vegetarian and the proteins are provided by the red beans. In this salad, you can also add diced chicken or crumbled tuna.
