Family Friendly Fridays: Grilled Salmon with a Fresh Citrus Salsa

This morning Scott and I are headed up to New York City for a night of celebration and, for me, a subsequent morning with some of my fellow blogger moms at BlogHer where we'll be eating an amazing breakfast in a penthouse suite atop New York City, all sponsored and catered by Kelloggs.  

I can hardly wait.  One night with no child interruptions paired with a morning surrounded by amazing blogging women with an adult view of New York City as opposed to a view of my 17 month old's morning diaper, is hardly something you'd ever hear me turn down.  Not that I don't love and cherish my children of course, but sometimes, even super moms need a night away.

I will take lots of pictures and be sure to share the experience with you all on Monday, but until then, enjoy this delicious, easy, family friendly meal.  My kids tore this up.  Nick couldn't get enough of the fish and Alex and Andrew were coveting their salsa, wielding their silverware like a pitchfork any time someone tried to sneak a bit off their plate.

2 Mandarin Oranges, Chopped
2 Green Onions, Chopped
1/8 Cup of Olive Oil
1/2 of a Lime, Juiced
2 Tbsp of Maple Sugar 
1 Tbsp of Balsamic Vinegar
1 Tbsp of White Sugar
A few good shakes of Salt, Pepper, Maple Sugar Mix
1 Pound of Salmon

Now I realize that you're probably reading this ingredient list and are thinking, "What the heck is Maple sugar?"  Well here's my bucket of maple sugar:


Just one of the many benefits of vacationing in Northern Vermont.

For your salsa, go ahead mix together in a bowl your chopped up mandarin oranges, green onions, olive oil, lime juice, balsamic, sugar, and maple sugar.  Add salt and pepper to taste.  Stir it all together and throw it in the fridge to marinate while you're grilling up your salmon.


Now grab your salmon and sprinkle liberally with your salt, pepper, maple sugar mix (again a Vermont spoil).


Throw your salmon on the grill and cook it through for about 10 minutes, flipping once.  Here's mine with those oh so beautiful grill marks.


All that's left to now is throw that beautiful citrus salsa on top, grab your fork and knife, and try to restrain yourself from downing the entire hunk of fish in one bite.
