Family Friendly Fridays: Oven Baked Fish Sticks

Last night I went out to dinner with about 20 other bloggers from around the Charlotte area for our first ever local blogger's meet up.  What a fun and informative time!  I had no idea there were so many others doing what I did so close to home.  We had a wide group of ages, experience levels and niches, along with both men and women.  I thoroughly enjoyed hearing about everyone's blogs and learning several new tips and tricks I hadn't known before. 

There is just something so "real" about meeting the person behind the blog. If you don't already have a local blogging meetup in your area, I recommend you get one started.  It's a fabulous opportunity to network and meet some other men and women on a more personal level that share your same passion for blogging!

Now that I have that out of my system, let's move on to Family Friendly Friday and the recipe of the day.  Just a reminder to add your family friendly link to the bottom of post.  You can add any type of post from a recipe to a craft to a vacation.  The only requirement is that it be kid friendly.

Today I'm going to post up a recipe for oven baked fish sticks.  Because, honestly, what kid doesn't like a good 'ol stick of breaded fish on their plate?  Nicholas, my oldest, was the by far the biggest eater of these.  He had two helpings for dinner, ate the leftovers for lunch and then asked if I'd make them again for dinner the next night.  If that's not a family friendly dinner, I'm not sure what is!  So let's get started!


1 Egg
1 Pd of Fish (I used Halibut)
1 Tbsp of Old Bay
1/2 Cup of Flour
1 Cup of Corn Chips, Ground
1/2 Cup of Panko
1 Tbsp of Parmesan Cheese
1/4 tsp of Pepper


In a bag or bowl, add in your old bay and 3 or 4 good shakes of pepper. Drop your fish in and coat them completely.


Grab three separate bowls.  In the first scramble up your egg, in the second add your flour, and to the third add the panko, corn chips, and parmesan cheese.


Grab your bowl of fish, and one piece at a time, and dip them in the flour, then the egg, and finally the panko mixture.  Lay them out on a cookie sheet lined with aluminum foil (it's all about the easy clean up, right?)


Cook up the sticks in your oven, set to 350 degrees for about 20 to 25 minutes or until the fish is cooked through.  And now you're ready to serve up the best homemade fish stick this side of the Mississippi!
