Mutton Mee Hoon Soup
Instead of having mutton soup with white rice, I decided to prepare something different for a change and came up with my own recipe of mutton mee hoon soup. This is a complete meal, which can be served anytime of the day. Ingredients: 300g mutton (with bones) 1tsp blended/grounded ginger 1 tbsp all purpose flour 1/2 tsp salt Mix all these ingredients and keep aside. Other ingredients: 3 potatoes (cubed in chunks) 4 cloves garlic (chopped) 1/2 tbsp dried rosemary 1tbsp crushed black pepper (or as your prefer) 1tbsp coriander powder 1 tsp cumin powder 1/2 litre water 2 tbsp olive oil 1 stalk of coriander leaves (sliced) 1 stalk of spring onion (sliced) mee hoon (as needed, blanch in hot water for 4 min, then in running water, drain) Method: When oil is heated fry the garlic until golden brown and crispy. Remove and keep for garnishing later. Into the same oil, fry the mutton for 5 mins. Add in water, potatoes and all the spices. Let it simmer over low heat. Check to see whether the mutton and potatoes are cooked. Once this is done, off the heat. Into a serving bow, add the needed amount of mee hoon and mutton soup on top.
