Red Taters and Green Grannies
When I saw the title of this recipe in Simply in Season, I had to smile. For some reason it reminded me of the Red Green Show. Or maybe Christmas. Regardless, the ingredients are simple, hearty, and works as a side or main dish. Eh. It’s just one of those good recipes to have in the back of your head. CLICK HERE FOR A PRINTABLE VERSION: Red Taters and Green Grannies 5 small red potatoes (unpeeled, julienned) 1. Season the potatoes with salt and pepper, and saute’ in a large frypan. May use oil. 2. Add the apples, onions, and celery and stir. Cook on low heat, covered, stirring occasionally, until tender. (About 20 minutes). 3. Sprinkle cheese on top, cover and cook another minute to melt. Serve immediately. Servings: 4 as a main dish, up to 6 as a side.
