I realized the other day that I haven?t actually posted a recipe in a while. Well, there is a reason for that. You see, I haven?t actually been cooking. I know, who the heck am I?
My meals lately are more of a compilation of various ingredients thrown together and called ?dinner.? Kind of like this salad I made the other day. It?s workin? for me..and since I don?t really have much time on my hands these days, I?m ok with it. Perhaps I should consider a title change?The Lazy Yogini. Has a ring to it doesn?t it?
Since I don?t have any exciting recipes to share with you, I thought I?d share one of my ?quick fixes.? I guess I have been channeling Sandra Lee lately and have been doing the whole semi-homemade thing, just with a healthy twist.
Today while perusing the store, I wandered over to the fresh, hot soups (side note: I vowed several years ago to never eat canned soup again. Ever. Seriously, if the chicken and vegetables can sit on the shelf and not go bad after several years?then something is terribly wrong!) and saw a Green Chile Stew that looked mavvvvelous. It had lots of veggies and a little kick to it?but not much protein. And nothing green (Are you seeing where I?m going with this?).
I wandered over to the rotisserie guy (and yes, that is his official title) and got a cut of chicken breast and made my way home to explore the vegetable drawer. Here?s what I had when I got home? Then, I worked my magic. First, stew in the pan? then some some rotisserie chicken?
and then some spinach. It all cooked down to this? And voila! A super healthy, protein and fiber packed lunch thanks to the additions I made. I think this is a great idea for those of you who are busy working or going to school?just think outside of the box and make it your own!
