Preparation
- The marinade:
Peel the ginger with a teaspoon, then grate.
*Here we've used half the peeled piece. - Place the oil, salt, pepper, curry powder, turmeric, coriander, grated ginger and crushed garlic in a bowl and toss to combine.
- Cut the chicken into small cubes and add to the bowl. Mix well, then filter the bowl before chilling for at least 1h30.
- Satay sauce:
Mix oil, peanut butter, red curry paste, coconut milk, lime juice, honey, soy sauce and crushed garlic in a saucepan.
- Place the pan over the heat and bring to the boil. Stir occasionally to prevent the sauce from sticking. Remove from heat when sauce has thickened.
- Rice:
Cook the rice with 1.5 times its volume in water for 10 minutes, covered.
- Skewers:
Form skewers with the marinated chicken pieces by stabbing them into skewer picks. - Place the skewers in a large, hot frying pan over medium heat and cook for 4 min per side.
*Adjust the cooking time if necessary, turning them over when the sides are golden brown.
- Serve skewers with rice and sauce on the side. Sprinkle with chopped peanuts and coriander.

You can store it in an airtight container in the fridge for around 5 days. It contains no animal ingredients, so it will keep for a long time.
