Ingredients: 1 tablespoon oil (in this case sunflower oil); 1/2 tsp. salt; 1/2 tsp. pepper; 1 pinch curry powder; 1 pinch turmeric powder; 1 pinch coriander powder; ginger (small piece, grated here); 1 garlic clove (crushed here); 2 chicken breasts (630 g here); 1 tablespoon neutral oil; 50 g peanut butter; 1 tablespoon red curry paste (level); 15 cl coconut milk; 1/4 lime (juice); 1 tablespoon honey; 2 tablespoons soy sauce; 1 small garlic clove; 100 g rice (basmati in this case); 1 tablespoon peanuts (chopped); fresh coriander (chopped)

Ready to travel without leaving your kitchen? These chicken skewers with satay sauce are just what you need! Tender chicken, marinated in a blend of spices that makes your mouth water just thinking about it, then grilled to perfection :) And the sauce? A little flavor bomb, with peanut butter, creamy coconut milk, a touch of red curry to spice things up and a hint of lime for balance. It's creamy, indulgent and super addictive! Serve with a little rice, a few crunchy peanuts and a little coriander for freshness.

The marinade:
Peel and grate the ginger.

*Here we've used half of the peeled piece.
Place the oil, salt, pepper, curry powder, turmeric, coriander, grated ginger and crushed garlic in a bowl and toss to combine.
Cut the chicken into cubes and add it to the bowl. Mix well, then cover and leave to marinate in the refrigerator for at least 1 hour.
Satay sauce:
Mix oil, peanut butter, red curry paste, coconut milk, lime juice, honey, soy sauce and crushed garlic in a saucepan.
Place the pan over the heat and bring to the boil. Stir occasionally to prevent the sauce from sticking. Remove from heat when sauce has thickened.
Rice:
Cook the rice with 1.5 times its volume in water for 10 minutes, covered.
Skewers:
Thread the marinated chicken pieces onto the skewers.
Place the skewers in a large, hot frying pan over medium heat and cook for about 4 minutes on each side, adjusting the cooking time if necessary. Turn the skewers over when the sides are golden brown and crispy.
Serve skewers with rice and sauce on the side. Sprinkle with chopped peanuts and coriander.
