Savory French-Toast BLT from Everyday Food Magazine, May 2010
Ah, breakfast, the best meal of the day....as long as it's not served too early. I can drink coffee first thing in the morning. Well, strike that. I HAVE to drink coffee first thing in the morning, but the thought of eating doesn't go over well until I've been up for a couple of hours. Even though I will eat cereal, pancakes and other breakfast items, my most favorite combination of foods with which to break my fast includes eggs, bacon, and potatoes in some form.
Enter Martha Stewart. The May issue of Everyday Cooking has a nice little section tucked in near the back called "Breakfast for Dinner." It includes a few things I definitely won't make like Shrimp and Andouille with Grits (I've been in the south for 15 years and still don't like grits) and Corn Cakes with Goat Cheese. It also has a couple that are possibilities if I have a willing family at that point, but the star of this section looked to be the Savory French-Toast BLT. Who doesn't like a BLT?? So, it was our breakfast today. The BLT part is easy enough; frying up bacon, cutting tomatoes and pulling lettuce leaves. The French toast was simple too. It's basically cream, eggs, chives and seasoning. I must have had it pulled together within 20 minutes of starting and was well pleased with the results, even though I had to use little remnants of lettuce because it had all disappeared in our recent dinner salad. When it came time to eat, Sophie snagged her bacon right off, then munched on the tomatoes and finally, coerced by the promise of more bacon, ate half of her French toast. My husband pulled off the tomatoes since he can't stand them and ate the other two parts, then announced that it wasn't worth the effort to make again. I have to admit that I agree. There was a BLT flavor when all three BLT ingredients were eaten together, but the savory French toast didn't add anything in my book. It was also hard to eat with a fork as the different layers kept sliding around. What I think would be good and worth a try, is making a Monte Cristo out of it, adding some mayonnaise between the toast layers for some moisture. This sandwich was VERY dry. Maybe I'll try that. This isn't bad, but it also didn't get high marks around our table. related searches : Savory
