SLIME soup:)
This is such a tremendous and yummy soup. It's perfect for summer. It's light, healthy, and taste good too! And, did I mention how simple and easy it is to prepare??? Well, it IS easy to prepare!!! I love making this soup when I need a quick and healthy meal on the go. You prepare the soup and put it in a thermos and off you go:) It's better for you than going to a fast food place. I like fast food like anyone else, but it should only be eaten occasionally. We should try and cook as much as we can at home. At least you know what you are putting in your food. Well, I hope you get to try this and ENJOY!!!!!!!! SLIME SOUP (Nigella Lawson) 4 c. frozen peas1 scallion (I use 2 to 4, YUM)garlic powder, salt, pepper, onion powder, to taste (all my addition)3 cups boiling waterchicken or vegatable stock concentrate or a stock cube, to taste1 ball mozzarella, diced, approximately 10 ouncesCook the frozen peas, scallion, spices, and chicken stock in the boiling water, until tender and cooked through. Drain and discard the scallion, if you want, EVEN THOUGH I NEVER DO, and put the peas into a blender. Make sure you take the middle part of the blender top off, to let out steam. And, before you blend, place a rag over the top hole to prevent splattering. Add the mozzarella. Pulse the pea soup until smooth, and ENJOY!!!!!!!!!!! Happy Baking!!!!!!!!!!!!!!!!!!!!
