Whey Olive Bread, Open Sandwich and an Award
I have tried various liquids with bread to make it softer and assure that the bread would rise. Using whey left from paneer works best for me. It also gives a flavour to the bread besides adding to it's nutritional value. I tried this with a basic herb olive dough and shaped it the way I desired A loaf that could be had toasted with butter or as a bruschetta As a Foccacia. I baked it in an oval tin and cut the side to get a square shape just like the one at Moshe's in Mumbai. Moshe's used to be our favourite place to pick up speciality breads but now they lost a customer ;-) Both turned out rather good. We enjoy herbed breads a lot, since they are great n its own with some butter, or as an open sandwich and pair well with pasta or any spicy gravy. This is my entry for Yeastspotting Ingredient 3 cups whole wheat flour 3 cups plain flour 2 cups whey 1/2 cup milk 2 tsp yeast 1 tsp sugar 2 tsp salt 2 tbsp extra virgin olive oil 1 tsp lemon A pinch dried ginger (soonth) 20 olives mix of green and black 1 tsp oregano 1 tsp basil 1/4 tsp thyme 1 tsp grated garlic (optional) 2 tbsp chopped green & red jalapeno (optional) Method Mix the flour and yeast together. Make a whole in the center and place the rest of the ingredients excluding whey and milk. Add the whey slowly to the center as you knead it. I use a hand machine since I hate kneading by hand. Collect the dough and then add the milk as you knead. Place it in a lightly oiled bowl, cover with cling film and allow to rise for 1 hour or so until it is more than double in size. I cover it with cling film loosely and place the bowl in a large ziploc bag. It ensures a softer crust. Punch it down and leave to rest for 5 minutes. Knead for 5 minutes until smooth on a lightly floured surface. Divide into two and shape as desired. Cover with a well oiled cling film Allow the bread to rise for 30-45 minutes until almost double in size. Brush with extra virgin oil and bake in the oven at 180-200C for 45 minutes. I scored it with a wooden skewer to get a wavy pattern. I used the foccacia for an open sandwich. Sliced it from the center and again into two slices to get 4 large slices. With the crust side down, applied some butter, followed by tomato pizza sauce (made with boiled chopped tomatoes, onions, garlic, basil) topped with a mix of marinated vegetables and some grated cheese. I normally cut the vegetables (onions, desseeded tomatoes coloured peppers, baby corn, zucchini, olives, jalapeno) in long pieces and marinate it in a mix of (honey, lemon, pepper, paprika, salt and dried herbs - oregano, basil and thyme) for at least 2-3 hours. When you are ready to bake, keep the vegetables to drain so that the liquid drains out and the sandwich does not become soggy. The foccacia topped with vegetables and cheese ready to be baked... Baked them at 220C for 15 minutes until it just started browning. A healthy and scrumptious sandwich treat.... This is also my entry to Show me your sandwich hosted by Divya Vikram.
