EASY Apple-Sourdough Gluten/Dairy-Free Pancakes

Make the sourdough the night before, beginning with warm soymilk, yeast and 1 cup of gluten free-all purpose flour- plus 1 teaspoon of xanthan gum.
Whisk this into the apple mix the next morning- makes about 12 pancakes, or 4 servings of 3 pancakes each.
Top with Maple Syrup, or golden honey and walnuts or pecans.
