Tiramisu crepe cake
For Candlemas, it's not one but 15 crepes that we offer you to eat at once! How ? Thanks to our crepe cakeof course ;-) And for even more flavors but above all gluttony, we stuffed it with a cream with a good taste of coffee and cocoa. .. Does it remind you of anything? Materials
- 7 inches diameter circle
- 1 petite poêle
Preparation
- Prepare the crepes:
Combine all the ingredients, leave the dough to rest for 1 hour in the fridge, then cook the pancakes in a small hot pan with some oil. - Prepare the tiramisu cream:
Beat the mascarpone with the very cold cream, the icing sugar and the ground coffee until you obtain a firm mixture.
- Place all the crepes on a plate, place the circle on top and trim the edges of the crepes so that they are all the same size.
- Place the circle on the serving platter. Place two crepes on top of each other in the circle.
- Spread a tablespoon of cream over the entire surface of the crepe. Sprinkle with cocoa powder.
- Place a crepe on top, spread tiramisu cream on top and sprinkle again with cocoa. Repeat the operation until the last crepe.
- Spread cream on the last crepe then cover with pastic wrap and place in the fridge for 1 hour.
- Sprinkle top and sides of cake with cocoa powder. And now, it's ready !
Observations
Which pan to choose to make crepes?
Choose a crepe pan without edges, you can more easily turn your crepes using a spatula. To make this crepe cake, we recommend using a small skillet to make as many pancakes as possible and get a higher cake. Place the circle in the pan, the diameters should match.
What flavorings to add to crepe batter?
You can use vanilla extract, or rum, pastis... All flavors are possible. We recommend using coffee extract for this tiramisu flavored cake.
What can I substitute for coffee in tiramisu cream?
You can replace the ground coffee with instant or decaffeinated coffee. If you don't like the taste of coffee, you can use ricorea or cocoa powder, for example.
What to do with crepe scraps from a crepe cake?
Cut your crepe scraps neatly. Place them in a deep plate then add the topping of your choice such as salted butter caramel, melted chocolate, peanut butter spread, jam... You will get tagliatelle crepes :-)
