Lemon sorbet, a fresh dessert

The star of citruses is honored in this fresh sorbet, easy to make :)

Preparation
- Cut the top of each lemon, and gently squeeze the juice out of them, without damaging them. Then, take all the pulp out of the fruit, to keep only the peel. Put in the fridge.
- Put the sugar and the water in a pot and bring to a boil. Then take out of the heat, and pour it in the lemon juice. Stir and put in the freezer for at least 3 hours.
- Whisk the egg white with the icing sugar until it forms peaks.
- Take the lemon juice out of the freezer, and add the egg white to it. Mix gently.
- Put in the freezer for 30 minutes, then take it out and mix gently. Don't worry if there is liquid at the bottom, it will disappear at the end. Repeat this once or twice.
- Fill the lemons with the sorbet. There you are!
