Lemon is often enjoyed as a dessert. When temperatures soar and the heatwave approaches, prepare it in a frosty version! This sorbet will provide the refreshing note we seek while adding a hint of acidity to the tasting experience. For even more originality, serve your recipe in the empty lemon shells. Preparation
Cut the top off each lemon and gently squeeze the juice out, being careful not to damage the peel. Then, remove all the pulp from the fruit, keeping only the peel. Place them in the fridge.
Combine the sugar and water in a pot and bring to a boil. Remove from heat and pour it into the lemon juice. Stir and place in the freezer for at least 3 hours.
Whisk the egg white with the icing sugar until stiff peaks form.
Remove the lemon juice from the freezer and gently fold in the egg white.
Place in the freezer for 30 minutes, then remove and mix gently. Don't worry if there's liquid at the bottom; it will disappear in the end. Repeat this process once or twice.
Fill the lemon peels with the sorbet. Enjoy!
