  • Whisk eggs and sugar, until fluffy.
  • Fold in cake flour, melted butter, essence, and colouring.
  • Pour into a 10" x 14" tray lined with parchment paper and greased. Bake at 375 degrees F for about 12 mins.
  • Once done, take out from oven, flip onto another parchment sheet and roll carefully, while still a little warm. Let cool in the rolled position.
  • Once cooled, unroll, top with cream and mangoes, and re-roll. Chill in the refrigerator for about 20 mins, then slice and serve.
