Chicken & mayonnaise sandwich / chicken mayo sandwich

Ingredients

• 250 grams Chicken
• 4 Wheat bread (4 to 6)
• 1 Lettuce leaves (1 to 2 ; tear into small pieces)
• 4tbsp Mayonnaise (4 to 5 tbsp)
• 1 tsp Tomato ketchup (or hot sauce ; optional)
• Salt (to taste)
• Pepper (to taste)
• 2 tsp Spring onion (white part / Onion ; tsp finely chopped)
• Butter (to toast)

Preparation

• Cook boneless chicken pieces in little water by adding salt and pepper. Once it is cooked and water dries up;transfer to plate and allow to cool.
  
  Here I have used left over grilled chicken pieces.
• Cut into small pieces or shred or grind chicken pieces to get minced form. Make sure not to grind into paste.
  
  Place the chicken in a bowl with spring onion, lettuce leaves, tomato ketchup and mayonnaise ; mix until well combined. Season well with salt and pepper.
• Toast the bread using butter. Spread the chicken mixture on one slice and top it with the other bread.
• Pack or Serve in a plate!
