Here is a tasty and easy to prepare sandwich prepared with chicken and mayonnaise as the main ingredient.

Ingredients

250 grams Chicken
4 Wheat bread (4 to 6)
1 Lettuce leaves (1 to 2 ; tear into small pieces)
4tbsp Mayonnaise (4 to 5 tbsp)
1 tsp Tomato ketchup (or hot sauce ; optional)
Salt (to taste)
Pepper (to taste)
2 tsp Spring onion (white part / Onion ; tsp finely chopped)
Butter (to toast)

Cook boneless chicken pieces in little water by adding salt and pepper. Once it is cooked and water dries up;transfer to plate and allow to cool.

Here I have used left over grilled chicken pieces.
Cut into small pieces or shred or grind chicken pieces to get minced form. Make sure not to grind into paste.

Place the chicken in a bowl with spring onion, lettuce leaves, tomato ketchup and mayonnaise ; mix until well combined. Season well with salt and pepper.
Toast the bread using butter. Spread the chicken mixture on one slice and top it with the other bread.
Pack or Serve in a plate!
