Preheat grill to medium temperature. Oil the grill rack.
In a small bowl, toss the chopped herbs, minced garlic, 2 tablespoon olive oil, salt and pepper.
Wash Cornish hens, and dry them well with paper towels. Cut in half lengthwise. Smother hens with herb and olive oil mixture.
Grill hens, on medium heat, turning occasionally, until nice and brown, about 20 to25 minutes. When done, remove hens to the prepared platter, and let them rest for 10 minutes.
The altitude might be a factor in the cooking time. I researched this on Google and there was no conversion factor that I could find. I suggest you use a meat thermometer to measure doneness. 165 - 170 degrees Fahrenheit is done for a chicken breast.
