2 tablespoons finely chopped rosemary

1 tablespoon thyme leaves

2 tablespoons olive oil

2 garlic cloves, minced

4 small (about 20 ounces each) Cornish hens

1/2 teaspoon black pepper

  • Preheat grill to medium temperature. Oil the grill rack.

In a small bowl, toss the chopped herbs, minced garlic, 2 tablespoon olive oil, salt and pepper.

Response smellofrosemary:

The altitude might be a factor in the cooking time. I researched this on Google and there was no conversion factor that I could find. I suggest you use a meat thermometer to measure doneness. 165 - 170 degrees Fahrenheit is done for a chicken breast.
