Huevos rotos, the super easy spanish recipe - broken eggs
Not inspired for tonight? We offer you THE Spanish tapas : huevos rotos! Once considered a poor man's dish, it is now a essential when it comes to the aperitif. We love picking up pieces of potatoes, egg and Serrano ham ;-) By the way, if you want to make it again for an aperitif, don't forget sangria to accompany it as it should! Otherwise, do like us and put it right away in your"top easy and quick dinners to make"!

Preparation
Wash and cut the potatoes into slices. Pour into a hot pan: water, olive oil, salt, pepper, paprika and add the potatoes. Mix to combine.
Bring to a boil and cover for 15 minutes over medium heat.
Meanwhile, chop the onion.
Add the chopped onion, the crushed clove of garlic and fry everything over medium heat for 5 minutes.
Make hollows and break the eggs into them. Salt and pepper the eggs then cover for 5 minutes over low heat.
Add the roughly chopped ham and chopped parsley. And now, it's ready ! You can enjoy your huevos rotos as tapas or as a dish. Enjoy your food !
Observations
What can I substitute for Serrano ham in huevos rotos?
You can replace the Serrano ham with sausage, chorizo, or other cold meats such as Parma ham or Bellota for example. There is also a version of huevos rotos called "huevos rotos con carabineros" which is prepared with prawns.
How to make a gourmet version of this dish?
To improve this dish we recommend using truffle oil, truffle cold cuts or grated fresh truffle. Do not hesitate to add the herbs of your choice to decorate the dish, such as chives, green onion...
How to cook potatoes?
We chose to cook the potatoes in water and olive oil but traditionally the potatoes are fried in this dish. You can therefore cook your slices in olive oil or sunflower oil.
What can I substitute for potatoes?
You can replace the potatoes with sweet potatoes.
How to make a vegetarian version of this dish?
You can simply remove the ham.
