Masala vegetable pulao / vegetable palav

Ingredients

Number of serving: 4
Basamati Rice-3cups

Chopped beans - 1/2 cup

chopped carrots - 1/2 cup

chopped potatoes - 1/2 cup

Green peas - 1 cup

Onion - 2,chopped length wise

Green chillies - 2, chopped lengthwise

curry leaves - few

Few coriander leaves -chopped finely

water - 6 cups

salt to taste

oil - 3tbsps

ghee -2tbsps


Masala for seasoning:

Tej patta/Bayleaves - 2/3

cinnamon pieces - 2

cloves 5/6

cardmom 4-5

peppercorns 7-8

star mace - 2


Grind the following ingredients:

Scraped coconut - 2tbsps

onion - 1 medium, chopped roughly

garlic cloves - 5/6

greenchillies to taste

coriander leaves

ginger piece - 1 inch

cloves - 3

cardmom-2

cinnamon - 1"

Preparation

  • Soak rice for half an hour.
  • In a pressure cooker, heat oil and ghee, add whole seasoning masala and curry leaves, greenchillies and onion stir and fry for 3-4 minutes.
  • Then add the ground masala paste and stir and fry until the moisture evaporates.
  • Add all chopped vegetables fry for 4-5 minutes.
    Add salt and rice and stir well.
  • Then add water and lemon juice, mix well and close the lid.
    cook until done or one whistle.
  • Palav is ready.
    Serve with curd raitha and carrot-cucumber salad.
