- Heat 1 tablespoon of ghee & roast the basmati rice slightly. Keep aside.
- Heat oil in the heavy bottomed pan, add cinnamon stick, cloves, cardamom, bay leaf, green chillies and chopped onions. Saute till tender.
- Add ginger garlic paste, mint leaves and corriander leaves.
- Add chopped vegetables and salt to taste. Cook till tender.
- Add coconut milk, lemon juice and the basmati rice. Cook till done.
- Garnish with roasted cashewnuts.
- Serve with raita.
