We've found THE perfect easy and quick recipe for pesto lovers like us: Pistachio pesto pasta! Here's a super simple meal idea for lunch or dinner, which can be enjoyed warm with a touch of parmesan, or as a pasta salad that's easy to take to work or on a picnic. And to give a little twist to classic pesto alla genovese, we've replaced the pine nuts with roasted pistachios, which will bring a whole new flavor to your pasta dish. This pesto goes just as well with long pasta as with short pasta, so grab your saucepan and blender and let's get cooking! :-)

Cook the fusilli in a large pot of boiling salted water.
Meanwhile, prepare the pistachio pesto: place the basil, Parmesan cheese, olive oil, and pistachios in a food processor.
Chop until you get a paste. Taste and season with salt and pepper if needed. The paste will be thick: this is normal, it will be diluted later.
Drain the pasta when it's al dente, reserving some of the cooking water. Pour the pistachio pesto into a pan, add a little of the reserved pasta water, and stir well to loosen the sauce. Add the drained pasta and toss to coat. Add more pasta water if needed.
Serve the pasta, sprinkle with chopped pistachios and top with basil leaves. Enjoy!
