An easy idea to serve for lunch or dinner all year round, pistachio pesto pasta takes very little time to make and everyone will love it. Try it if you’re in the mood for a creamy vegetarian first course. We chose fusilli, but you can use other pasta shapes too, since pistachio pesto goes well with both long pasta and short pasta. Here, we’ll explain the method step by step. If you’re a big pesto lover, you absolutely have to try it!

Cook the fusilli in salted water.
Meanwhile, prepare the pistachio pesto by placing the basil leaves, grated Parmesan, olive oil, salt, pepper, garlic, and pistachios in a blender.
Blend until you have a thick mixture (the finished result should be a cream that will be thinned out later).
Drain the pasta when it's al dente, reserving some of the cooking water. Pour the pistachio pesto into a pan, add a little of the reserved pasta water, and stir well to loosen the sauce. Add the drained pasta and toss to coat. Add more pasta water if needed.
Serve the pasta, sprinkle with chopped pistachios and top with basil leaves. Enjoy!
