Shredded Chicken:

2 boneless chicken breasts

2 cups low fat/salt chicken broth

1 onion, diced

2 anaheim peppers, diced

1.5 tablespoon diced garlic

1 tablespoon chili powder

2 teaspoons cumin

1 teaspoon oregano

1 teaspoon cajun seasoning

1/2 teaspoon Mrs Dash Chipotle Seasoning

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes

Toppings and Whatnot:


chopped romaine

shredded cheddar cheese

sour cream

mole sauce

refried beans


  • Toss all the shredded chicken ingredients into a saucepan and mix together.
  • Bring to a simmer and cover. Cook for about 30 minutes.
  • Remove chicken from the saucepan and shred.
  • Toss chicken back into the saucepan and stir.
  • Cover and cook another 20 to 30 minutes.
  • Pile some chicken onto a tortilla and top it with whatever additions suit your taste buds.
